if no variation was not created while making the original listing its not possible to add new variant through the dashboard. You will have to upload a file for it. If there is already 1 variant listed then extra variants can be added directly

We discovered a round about way to bypass this issue.

You can try listing your item as first single listing without any parent grouping. Then in your existing parent variation, under Variation section, add the attribute and SKU of that single listing. Your single item will get grouped under the parent without any issues.
