I like the look of a listing with variations where the buyer can see this pictures and it does not turn into a word drop down box.
What is the max child listings I can have under a parent listing before the child listings go from displaying pictures to just a drop down word box(example style, color)?

Michelle at Amazon here. I understand that you would like to know how many items you can have before it becomes a drop down. This will depend on the category that you are listing in as each can be different, however, the team does not advise what the max number of children is.
