I would like to merge my existing products under one parent listing, so people can view all of variations in one PDP.
How does this impact sales history? Reviews? Will they all combine, or will they start from scratch?

Thanks for posting to the Forums. Please be advised that merging ASINs can only be done if they are an identical product, as per the info in the Listing Lounge: Duplicate ASIN's, when and how to merge them page. If the items are not identical, the merging tool will not be able to merge the ASIN’s.
Generally, you'd want to avoid merging because merging means putting all ASIN's in one ASIN, so duplicates of the same color (etc.) become one ASIN.
If you create a variation, then the reviews will get shared under that variation. Please see the We Are Family (of Variations) page written by my colleague @Danny_Amazon for a detailed overview of how variations work.
