opt out expedited shipping

Do we have the choice to opt out of selling to customers who request expedited shipping of 2 or 3 days despite offering FBM from Massachusetts?

You never have to offer expedited.

But if you have offered it, you must honor that promise.

If on the professional plan -- look to your templates -- all of them.

If on the individual plan, you have to edit each SKU.
