Am I correct that If I enter a production time of 3 on a listing, that 3 overrides the new default handling time? @Rose_Amazoncan you help me understand how this new default setting impacts my individual production times on listings?

Thanks for the post.
The team found that nearly all orders received by sellers are handled within 1-business day from when the order was received. However, many sellers had configured 2-days Handling Time as their default, making their delivery dates seem less appealing to buyers browsing, and could lead to miss sales. To help sellers set more accurate delivery dates we are deprecating the 2-day default Handling Time.This change will take place between 11/01 and 11/06.
If you need to set a longer Handling Time for specific products, you can assign a SKU Specific Handling Time individually on the Manage Inventory page or in bulk by using:
1) The Inventory Loader
2) The Price and Quantity file
3) The Listing Loader
Including a quick read on Manage your handling time.

@Rose_AmazonThis is a horrible change from a handmade perspective and this is why:
I have have a production time of 5 days on all my FBM listings. HOWEVER I have had numerous times where Amazon will just randomly change it to a 0 production time. That 2 days handling time has saved me several times because I have to then drop everything that I am doing to make sure an item gets made and shipped in that 2 days very stressful.
Sometimes the production time gets deleted from switching FBA to FBM.
Sometimes the production time gets deleted from having a sold out FBM item and adding qty to it.
Sometimes the production time just disappears all together.
We need that extra built in buffer. Expecting me to make and ship an item in 24 hours is not acceptable, its INSANE.
This is just another example that Amazon does not support true hardworking handmade artisans.

@Seller_ZciP72UwlNf6cYour answer depends on this: Are you using automated Amazon shipping times or have you determined and set your own?
If you are using your own then your handling times are excluded from the shipping time. For example: If you have a 2 day ship time and a 7 day handling time - You have 7 handling days and 2 ship days equaling 9 days total.
If you use Amazon automated shipping you will sometimes see that Amazon will automatically set up shipping (1 and 2 day shipping) that includes handling time which basically nulls your handling time and you have to ship in 1-2 days. I found this out the hard way. :( I then removed the automated shipping altogether.
The best thing to do is to set SKU specific handling times using a spreadsheet and set your own shipping times. I use a Category Listings Report and then go to the handling time column and set all of mine that way. This is supposed to be a sure way that Amazon will not change your times but I have found that mine have been changed by Amazon anyway without my knowledge and I have had to change them back.

I would add that this ALWAYS happens to me. I have to click EDIT on every listing that has any change because the Production Time is erased.

Hey @Seller_ZciP72UwlNf6c, yes! "Production Time" field on Handmade Listings is the same as "Handling Time" which overrides the "New Default Handling Time"
As per the Managing your Handling Time Help Page:
"Handling time, also known as production time or lead time to ship, is the time between when the buyer places the order up to when you hand over the order to your carrier. Handling time is part of the delivery promise calculation displayed on the offer listing and checkout page."
SKU-level handling time (Production Time for Handmade sellers)
"SKU-level handling time allows you to set a unique handling time (faster or slower) than your default handling time. If you set an SKU-specific handling time for a product, that setting will override both the default handling time and the template handling time."
