I can't remember how Amazon handles it if we have a snow emergency where we live and none of my employees can make it to work to get our items shipped out. Anyone know an answer?

It doesn't really have anything to do with Amazon; that problem falls completely on you. It's up to you to keep an eye on your weather forecast and, if necessary, either put your listings on vacation or extend your handling times.
If you have a lot of listings, the second option is near impossible now due to Amazon's brilliant decision to default everyone's handling time to one day. However, if you have just a few listings, change the handling time within the listing/SKU itself and the default will (should) then be overridden.

I understand you have questions regarding possible inclement weather and its impact to your business.
As @Seller_LImVvUWeyiCfQ has explained here, Amazon does expect sellers to be proactive when it comes to their business operations. If there is the threat of snow, I suggest making changes to your operations in order to avoid impacts on order performance and customer experience. Vacation mode can help in preventing further orders being received, however, it does still require that you ship out pending orders on time.
What can you do to be proactive about a pending snowstorm? How far away is this weather from today? Would it benefit you to turn your account to vacation mode two or three days ahead of time?
If there is a need for any type of appeal, you will be eligible to do so and explain the situation. I do suggest being proactive rather than reactive about a situation, as this also helps you better prepare for future weather incidents.
